Natura e Salute,” „Nature and Health” was started in the seventies (registered as trade-mark) in response to a growing awareness of the dangers of genetic food modification and concern over the loss of traditional varieties of local plants and farm animals.
Here at Vagli, we prefer quality to quantity: we have less, but healthier products.
This means that we eat our own corn, we drink our own wine and taste our own olive oil. We do not sell our products to strangers, but are in personal contact with those who eat them, often even together with us, so that they can immediately tell us how they like them.
We produce everything with the best possible artisans‘ techniques. This is what creates the different taste of our „Nature and Health“ jams, cereals, cakes, pies, pizza, the different pork specialities, our aromatic herbs, wine and olive oil.
Whenever possible, we use our own firewood for cooking, adding thus a scent of our woods to the produce.

Aromatic Erbs


A real holiday in nature must offer natural products and remedies! These are the aromatic herbs „Nature and health“ you will find here:
 
 
Lemon Verbena
Used for cooking, ideal for liquors and refreshing drinks.
Also used as a digestive and for palpitations.
Terragon (Estragone)
Used for cooking, for roast meat, salads, sauces and condiments. Excellent for aromatic vinegar.
Used for its digestive properties, especially when fresh. Effective against hiccups.
Marjoram
Used for cooking.
Its aroma, more delicate than oregano, is used for soups, vegetables, meat and home-made produce and conserves.
Effective against migraine, toothache, painful menstruation, rheumatic pains and digestive problems.
Mint
Used for cooking, for delicate pancakes, liquors, drinks and sweets.
Effective in case of digestive problems, bad breath, refreshes and disinfects the throat.
Makes good tea.
Rosemary
UUsed for cooking, for roasts, grilled and fish as well as for aromatic vinegar.
Effective against loss of appetite, headaches, toothaches, rheumatic pains.
Sage
Used for cooking, for aromatic soups, meat, fish, vegetables and liquors.
Used to heal wounds, for digestion, against bronchitis and sore throats.
Thyme
Used for cooking meat, fish, vegetables, sauces, liquors and aromatic vinegar.
Effective against coughs, in case of general diseases of the respiratory system and digestive problems.

Jam

We prepare home-made „Nature and Health“ jams with our own fruit.


We add sugar and water without anything else (no artificial conservants).
The jams are available in glasses of  0.7 and 1.2 kg, made from:

Olive oil


Together with wine, olive oil is the most typical produce of our hills. After the harvest by hand, the olives are pressed according to old Tuscan tradition and put into bottles without anything else that might change colour, taste or quality: this is how you will find the olives on your table again.

Wine

Our farm offers its own red wine and Vernaccia (white wine). The harvesting and entire working process is of antique artisans‘ tradition.

Our Vernaccia vineyards, characteristic of the San Gimignano region, have vigorous vines that give a slightly bitter and dry white wine called Vernaccia di Vagli.
The origin of the Vernaccia vine is not known; it has certainly found ideal conditions in this area.
The Vernaccia wine has been part of the history of San Gimignano for centuries. It has been popular on the tables of the rich since and was for the first time mentioned in a document of the year 1276. Famous because of its characteristic straw-like colour and particular perfume.
Our excellent red wine is called Rosso di Santo Jacopino; it is made of San Giovese, Canaiolo and black Malvasia raisins. Its colour is intense red and its perfume full.
We also produce a „Vin Santo detto Vino del Beato Bartolo“. („holy wine called the wine of Blessed Bartolo“), which we obtain from a late harvest of raisins then put to dry in a dry and open place. After pressing, the product is put into small barrels for three years. The result is a Vin Santo with a particular and unique perfume.
 

Dried pork produce

Our pigs live within an enclosure in the woods where they can also eat acorns. We obtain the following typical products after a traditional working process and storage:


Ham
„Finocchiona“, a typical Tuscan salame, flavoured with fennel (finocchio)

Vegetables

According to the season, we harvest tomatoes, courgettes and its flower, cucumbers, peppers, salads, egg-plants, beans, peas, onions, potatoes and carrots.
